Liquid Nitrogen is so cold and freezes so fast that it reduces the size of ice crystals in the ice cream. Smaller the ice crystals, smoother the ice cream. The liquid nitrogen causes the fat and the water particles to stay very small, giving the ice cream its creamy consistency too.

Traditional ice cream is frozen using a 2 step process. They first blast freeze the ice cream to a semi-solid state and then place it in a commercial freezer or hardener to freeze the rest. But each time cycling through temperatures, the ice cream melts and re-freezes. Ours has only been frozen once and hence no freezer burns.

Is nitrogen safe to eat?

Yes, completely. It fast freezes your ice cream and evaporates, giving you a creamy and smooth texture.
